Friday: buy, trim, and season Saturday: Cook 🦴 brisket on at 6am, 150 degrees and smoky for 2 hrs 🦴 250 until stall 🦴 275 until out of stall 🦴 wrap in a foil boat at about 180 degrees internal 🦴 push smoker temp to 280-300 degrees with stack fully open 🦴 pull the brisket at about 195/200 degrees internal. This is intentionally a little under done b/c my oven set on 150 actually runs about 170 🦴 after pulling the brisket, rest it on the count
